Beans, beans ...


Dave Ramsey talks about rice and beans as a frugal staple. "Rice and beans, and beans and rice" comes up quite a bit on the message boards his followers post on and on his facebook page. After reading it enough I knew it was something I needed to add to our diet, as our grocery budget is really tight and often strained to the point of breaking, and I was out of other ideas for saving in that area.

Pinto beans cost about $1 per pound, raw, at Sam's Club or WalMart. 1 lb of raw beans is about 2 cups of beans, and will equal about 6 cups of cooked beans. 6 cups of beans for $1. 6 cups of fiber, protein, and iron for $1. And they're filling. Seriously, hard to beat and much less expensive than the same amount of poultry or meat.

Rice we can eat, except that until just a few weeks ago I was a really, really crappy rice cooker. I've improved so much just by (1) rinsing the rice a lot and (2) following better cooking directions, actually cooking the rice for a shorter time than I thought I should.

Beans were a tougher sell around here. I tried bean soups, beans in casseroles, rice and beans, beans and rice. Not much luck, and I was serving them at least once a week. Darn it.

Over the last six months or so, however, the kids have gradually accepted beans as a part of their diets and meals. I've been able to sneak black beans or pinto beans into crock pot meals or casseroles and no longer receive complaints.

One day I needed refried beans. Not having a can of them available I found a recipe and made my own. The kids LIKE them. Really LIKE them. A LOT.

I use about 1 lb. of beans and end up with 9 cups of refried beans. Very cost effective.

Vegetarian Refried Beans

1 lb. dry pinto beans, rinsed
2 T minced garlic, divided
1 medium tomato, diced, or 1 can diced tomato
2 T ground cumin
1 T chili powder
2 T olive oil
salt to taste

Place beans in a large saucepan and cover with an inch of water. Place over high heat and bring to a boil. When the beans have reached a boil remove from the stove, and drain. Return to the same pot and cover the beans with about 2" of water, and stir in 1 T garlic, the tomato, cumin, and chili powder. Bring to a boil over high heat, reduce heat to low and simmer for about 4 hours, until beans are very soft.

Once the beans have cooked remove some of the cooking water if there's quite a bit left, or add a little more if there isn't much left at all. Then add in the oil, salt, and remaining garlic. Mash or puree in food processor or blender. Place over low heat for 30 minutes, stirring occasionally.

Serve.

* I have heard that beans are more digestible if an acid, like lemon juice, is added when the beans are first boiled.
 * I have also heard that soaking the beans overnight, rather than bringing them to the first boil, is better for digestion. When I can't soak them overnight I bring them to a boil, turn the heat off, and let them sit for a few hours before draining them.
  ("more digestible", "better for digestion" = polite way to say "less tooting")

I freeze the refried beans we can't use right away, usually 2 3-cup containers.  When storing food I use these ZipLoc containers. They're clear and easy to label on the tops with tape, and they stack very well. In the refrigerator leftovers are kept in the ZipLoc containers, always stacked on the same shelf on the same side, making it really easy for the kids and I to know what needs to be eaten first, limiting waste. In the freezer they get labeled and dated and stacked ... easy to grab what I need.

The recipe we make most often with the beans is the Southwest Roll-ups. If you follow my menu plan Mondays you've probably noticed we make this once a week or so. The kids love them, and love having extras in the freezer that they can quickly pop into the oven even more. This past Sunday night I made 30 roll-ups, using 6" tortillas, for 7 people and there wasn't a single one left after the meal. They're that good.

  • iron plastic bags together to create a workable fabric and then make yourself a New Year's Eve dress or suit (or tote bag)

  • turkey broth - place turkey carcass in a huge pot of water, add some onion, celery, salt, and pepper and simmer overnight (if he's small you can do this in the crock pot), strain, and store in labeled containers, from the leftovers of our Thanksgiving turkey I was able to make 16 cups of flavorful broth

Tip: Uses for Leftover Christmas Cards

After Monday's post about what to do with leftover candy canes (I love that someone took the time and energy to create that yummy list) I decided to follow the "leftover holiday things" theme for this weeks tips.

Today, creative uses for leftover Christmas Cards
  • cut front off and glue it to a folded piece of construction paper or card stock to make a new card
  • cut out shapes and glue to paper for a "first words" or "first colors" book for a toddler
  • make playing size cards out of them for a house of cards
  • make playing size cards out of them for a concentration game (match 2 Santas, match 2 stars, etc.)
  • make a book of photos received from family and close friends to help kids learn who is who in their family
  • trace the front of the card with a cookie cutter and cut out to make a pretty festive ornament for next years tree, add some glitter if you wish
  • create gift tags from the cover
  • donate your cards to St. Jude's Ranch for Children. This charity recycles old cards by making brand-new ones. The money from these new cards is donated to the help children who were the victims of abuse, neglect and abandonment
  • cut out the words and use them to create a family word game 
  • frame them

Tip: Uses for Leftover Wrapping Paper

After Monday's post about what to do with leftover candy canes (I love that someone took the time and energy to create that yummy list) I decided to follow the "leftover holiday things" theme for this weeks tips.

Today, what to do with leftover wrapping paper. I have a few ideas, please feel free to add your ideas in the comments.
  • Shred it and use it as packaging material
  • Wrap tree ornaments in crumpled wrinkly leftover wrapping paper
  • Use as a mat in a picture frame
  • Laminate to use as a placemat
  • Add large squares to the kids craft supplies - great for practicing cutting and gluing, and as a colored paper for craft projects
  • Reuse it for wrapping in the future by carefully folding and storing it
  • Ball it up and toss it to the cat
  • Use it as fire starter paper
  • Practice paper folding arts with it
  • Decoupage, either large pieces or cut out shapes
  • Incorporate bits of it into holiday scrapbooking pages
  • Trace sewing patterns onto it, it's sturdier than newsprint and usually plain on one side
  • Create rolled and decoupaged paper beads for necklaces
  • Give some to the kids to create and cut out shapes for Grandparent Christmas cards
  • Cut or shred it into confetti

The kids feed themselves for breakfast and lunch (usually lots of fruit, pasta, sandwiches, or leftovers) so I will only be posting the dinner menu, as that's what I cook.

Tip: Salad Dressing

Making your own salad dressing is an easy cost saver. Homemade dressing is preservative free, seasoned to your liking, fresh, cost effective, and as easy as hitting the pulse button on the blender.

Here is the recipe for a favorite salad dressing of mine. When this is served on our dinner table the salad is gone!

Oriental Dressing
6 tsp. rice vinegar
2 tbsp. lemon juice
1 tsp. white pepper
1 1/2 tsp. dried mustard
1/2 c. oil
1 tbsp. sesame oil
4 tbsp. sugar
1 1/2 tsp. salt

I toss all the ingredients into a ketchup type dispenser like the one in this picture* and shake.

*My dispensers are clear with an easy to use lid and were very inexpensive at the dollar store. I use them for honey, soy sauce, and syrup which I buy in bulk, making the containers much too large for the kids. I also use them for salad dressing.

Tip: Produce Deal

This tip may be a "your mileage may vary" type of thing, but it's certainly worth a try.

The local flea market sells produce all weekend long. Great stuff and they're very busy and reasonably priced.

The flea market ends at 4:00 on Sunday afternoon and the vendors need to empty their shelves of whatever they've got left, they certainly don't need the produce to sit for a week.  

Sunday afternoons at about 3:50 pm the prices drop to bare bottom prices. 3:30 you won't find a better than usual deal, 4:20 they're long gone ... but right before closing is THE time.

Tip: Framed Art

Very simple tip - Purchase some inexpensive frames and use greeting cards or book pages as artwork. Pictures can be matted with cut paper or cardstock.

Tip: AC maintenance

A few simple things to do to take care of your air conditioning, lower AC costs, and reduce repairs.

Clean filters monthly. Not all AC filters are disposable, and disposable isn't better. For the same price as disposable filters Target sells cleanable ones that last for a very long time. At the beginning of each month I hose the filters and air dry them. Within a few hours they are back in place and back to work.

Suck the drain ports with a wet dry vac twice a year. Not doing this can result in clogs, which result in leaks in your house and problems with the AC unit.

There are plenty of tutorials guiding you through cleaning and maintenance of the AC system and condenser. I've never tried this myself, and don't plan to - it's pretty far out of my comfort zone. Whether you clean these machines yourself or hire someone to do it once or twice a year, know that an ounce of prevention is worth a pound of cure and that this routine maintenance can save a significant amount of money in the long run.

In summary:
  • Filters cleaned or changed monthly (the 1st is a good day to do it, change the calendar, change the filter)
  • Drain ports sucked twice a year, at least
  • AC and condenser maintenance performed once or twice a year

Tip: Postage

Two tips today. 

First, packages can be mailed from your front door, even priority mail and most international mail. Printing postage online, rather than heading to the post office and waiting in line, also results in a discounted price for priority and express mail and free delivery confirmation. The process is very simple and certainly a time, fuel, and money saver. Kind of hard to beat that deal!

At the USPS.com site you can also order stamps and free priority mail shipping products, which will then be delivered to your front door.

I keep a 25 lb. electronic postal scale nearby, which I purchased on eBay for less than $15 many years ago. I simply use that to weigh my packages, then calculate and print the postage. That's the whole of that.

At the postal service site it is possible to also request a package pickup. They've thought of just about everything, haven't they?

Second, stamps are about to get more expensive. Buy "forever" stamps now at $.44 each and they'll be worth $.45 after the rate increases on January 22nd. Saving $.01 per stamp is not big news, but the rate is highly likely to increase again in the near future as the United States Postal Service continues to struggle.

Sunday - Southwest Roll-ups using homemade refried beans, salad (made double the roll-ups and froze one batch for another meal)
Monday - Slow Cooker Thai Peanut Chicken, salad (we ate dinner, drove two kids to scouts, came home and the 8 year old had another heaping plate full ... this is one of those entrees that make for quiet meals, because everyone is too busy loving the food to talk)
Tuesday - Macaroni and Cheese, apple slices, broiled zucchini, orange wedges
Wednesday -Chicken All Dressed Up, yellow squash, salad
Thursday - Chicken Tacos, brown rice (when the kids get to pick their toppings, whether on tacos, pizza, or omelets, they enjoy it more and eat really well ... and the brown rice, now that I can cook it decently I can't get enough of it)
Friday -Chicken and veggies on the grill, salad
Saturday - Leftovers or Spaghetti with Tomato Sauce
